So, today, mom came down and spent the day with me and JMS. We took JMS to get his hair cut, ran a few errands, got his picture taken, and made a peach pie. I shared the pictures with family and friends on email, but cannot put them on here b/c they are professional and protected by copy write laws. He had so much fun with the photographer posing him and tickling him and making him smile and giggle. He is such a "ham."
However, I can share our newly discovered Peach Pie Recipe...mom and dad visited my brother and his family last week and brought home 30 lbs of Georgia peaches...and many good stories of how their family is doing.
You will need:
10 medium peaches, peeled-pitted-sliced
1/3 cup flour
1 cup sugar
1/4 cup butter
2 pre-made 9 inch pastry pie dough pieces
1. Mix and chop the flour, sugar, and butter.
2. Place 1 pie crust in the bottom of your pie dish. Alternate layering the peaches and the flour mixture.
3. Top the peach filling with the 2nd pie crust. Cut air holes in the pie crust.
4. Bake 45 minutes to 1 hour at 350. Or until the crust is golden brown. Don't forget to place a cookie sheet under the pie because it will bubble and ooze.
If too soupy, increase the amount of flour.

That recipe sounds pretty easy. I will have to try it!
yum yum! wish I had 20 lbs of peaches to get rid of! Instead, I have 6 zucchini, 2 yellow squash, 3 cucumbers and 6 tomatoes. and a jalapeno. I'm forseeing lots of squash casserole and zucchini bread this week. And cucumber salad. yum! Maybe I'll try to make spaghetti sauce for our pizza later in the week with the tomatoes. And when I have an overabundance of jalapenos, I'm planning jalapeno poppers. Mmmmm! Time to paint the laundry room.
